To make taro braised pork belly (香芋扣肉), you can follow these steps:

Ingredients:
- 500g pork belly
- 300g taro
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sugar
- 1 teaspoon dark soy sauce
- 1 teaspoon cooking wine
- 1 teaspoon ginger, minced
- 1 clove garlic, minced
- Salt and pepper to taste
- Water

Instructions:
1. Cut the pork belly into thick slices and blanch them in boiling water for a few minutes to remove excess fat.
2. Peel the taro and cut it into thick slices.
3. Heat some oil in a pan and fry the pork belly slices until they are slightly browned.
4. Add the minced ginger and garlic to the pan and stir-fry until fragrant.
5. Add the soy sauce, oyster sauce, sugar, dark soy sauce, and cooking wine to the pan. Stir well to coat the pork belly.
6. Add enough water to cover the pork belly and bring to a boil. Then reduce the heat and simmer for about 30 minutes.
7. Add the taro slices on top of the pork belly and continue to simmer for another 20-30 minutes, or until the taro is soft and the pork belly is tender.
8. Season with salt and pepper to taste.
9. Serve hot and enjoy your delicious taro braised pork belly!
